Banana Bread

It's cold outside, and I'm looking for comfort. I've got 3 bananas and an idea.....Banana Bread. I made this recipe for Christmas, and included 1/2 cup dates, 1/2 cup unsweetened coconut flakes, and 1/2 cup walnuts. Unfortunately,  I didn't have those things on hand, but I highly recommend making it that way. However, either way you have a comforting, warm slice of Heaven. I prefer to eat mine still warm and slathered with butter and my daughter likes it with a smear of peanut butter. I imagine this would be good as a French toast too! The possibilites are endless!

Banana Bread

1 2/3 cup all-purpose flour
1 tsp baking soda
1/2 tsp cinnamon
1/8 tsp salt
1 cup sugar
2 tbsp brown sugar
2 eggs
1/2 cup oil
3 ripe bananas
2 tbsp sour cream
1 tsp vanilla
Optional: 1/2 cup dates, 1/2 cup unsweetened coconut, 1/2 cup walnuts

Preheat over to 350 F degrees. Grease 3, 8 x 4 x 2 1/2 in, pans.
In a medium sized bowl combine your flour, baking soda, cinnamon, and salt. Set aside.

In a large bowl, mash up your bananas with a potato masher or fork. Stir in your sugar. Add oil, eggs, sour cream and vanilla. Mix until well combined.

Fold in your flour mixture into the banana mixture until well incorporated. The consistency of the batter should be like thick cake batter.

Pour into your loaf pans and bake on 350 F degrees for 45-50 minutes. Cool for 10 minutes.


  1. You know how I feel about sour cream... ha ha, but I'm serious when I ask, what does it do in a recipe like this? I see it in other recipes from time to time and so I wonder how having it in or out changes/alters the taste/texture?

  2. Good question. It helps bring more moisture to the bread. It also works to help the bread rise and be lighter.

  3. This banana bread has just the right about of sweetness, unlike the banana breads I always have made. They are usually overly sweetened.I think you are right about the dates, walnuts and coconut, they really add great flavor.
