Caliente Brownies

Ever heard the song, "Baby, did a bad, bad thing", by Chris Isaak? Well, every time I make these brownies, that song starts playing in my head. These brownies are a sinful blend of cinnamon, cayenne, and melted dark chocolate chips. And, yes maybe they aren't heart healthy, but they will do wonders for your mood! You might have noticed that the picture of the brownie I posted is slightly undercooked. Well, that's because I can't wait for them to set. Is that bad?



Caliente Brownies

Makes 8 generous sized brownies, or 16 "not as guilty about eating these" brownies

1/2 cup unsalted butter, melted
1 cup dark chocolate chips (Semi-sweet will work too)
1/2 cup sugar (I used evaporated cane sugar)
1/2 cup brown sugar
3 eggs
2 tsp vanilla
1/3 cup unsweetened cocoa powder
1/2 cup all purpose flour
1/8 tsp sea salt
1/2 tsp cayenne
1/2 tsp cinnamon

Preheat oven to 350 F degrees. Grease (or use parchment paper) an 8x8 pan.

In a medium bowl, melt butter in microwave for about 40 seconds. Pour in dark chocolate chips and mix till chips have melted. Set aside for about 5 minutes, until mixture slightly cools.

In another medium bowl, mix flour, cocoa powder, sea salt, cayenne, and cinnamon.

Add eggs, vanilla, brown sugar, and cane sugar into chocolate mixture and mix till well combined.

With a rubber spatula, slowly begin to add flour mixture into the chocolate mixture until throughly incorporated. Do not over mix!

The mixture will be very thick. I use an offset spatula to spread the batter to the edges.
 






Bake these bad boys for 25-30 minutes. Test with a toothpick. It should come out slightly wet. If you like them firmer, then by all means, give em' another 5 minutes. Let them rest for 30 minutes and then serve.
